Cheddar Scallop Cakes Recipe

Ingredients
  • 2 green onions .
  • 2 tbsps butter .
  • salt & pepper .
  • 2 tbsps olive oil .
  • 1/2 c medium cheddar .
  • 1/4 c flour .
  • 1/2 c dry breadcrumbs .
  • 1 1/2 lbs scallops, sliced .
  • 2 eggs, beaten separately .
  • 3/4 c flour

Directions
  • Step #1 Combine scallops, green onions, & cheese.
  • Step #2 Sprinkle top with flour & add 1 beaten egg.
  • Step #3 salt & pepper to taste,and put in the fridge for several mins.
  • Step #4 Shape scallop mixture into 8 cakes.
  • Step #5 Coat each cake with flour & then dip into egg.
  • Step #6 & then into breadcrumbs.
  • Step #7 Over medium heat melt butter & add oil.
  • Step #8 Cook cakes about 2min.
  • Step #9 per side or until golden.
  • Step #10 For a change use swiss, gouda,havarti.
