Thai Cobb Salad Recipe

Ingredients
  • 2 green onions, thinly sliced .
  • 1/4-1/2 tsp crushed red pepper flakes .
  • 8 c mixed salad greens, torn .
  • 1 tbsp soy sauce .
  • 1/2 c fat-free Italian salad dressing .
  • 1/4 c honey roasted peanuts .
  • 1 avocado .
  • 1/4 c fresh cilantro, coarsely snipped .
  • 1 1/2 c cooked pork, coarsely sliced .
  • 1 c coarsely shredded carrots .
  • 1-1 1/2 tsp fresh ginger, grated

Directions
  • Step #1 Half the avocado, seed it & peel it, then cut it into 1/2 inch pieces.
  • Step #2 In a large bowl mix salad dressing, soy sauce, fresh ginger, & crushed red pepper.
  • Step #3 Add Salad greens & toss lightly.
  • Step #4 Divide greens among 4 plates & top this with meat, green onions, carrots, avocado, cilantro, & peanuts.
