Chocolate Peanut Butter Bars Recipe

Ingredients
  • 2 eggs
  • 3/4 c sliced, unsalted dry-roasted peanuts
  • 1/4 tsp salt
  • 1 1/2 c peanut butter
  • 2/3 c packed brown sugar
  • 2 c semisweet chocolate chips
  • 1/2 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1 1/2 c all-purpose flour
  • 1/4 tsp baking soda
  • 2/3 c butter, softened
  • 1 1/4 c confectioners' sugar
  • 1/4 c butter
  • 1/2 tsp vanilla extract

Directions
  • Step #1 Preheat oven to 350 degrees F (175 degrees C).
  • Step #2 To make Pastry: Cream together 2/3 c butter & brown sugar.
  • Step #3 Stir in the flour, salt, baking powder, & baking soda until well mixed.
  • Step #4 Separate the eggs & beat in the yolks.
  • Step #5 Add in 1/2 tsp vanilla & mix well.
  • Step #6 Press mixture into the bottom of a 9 x 13 inch pan.
  • Step #7 Bake for 12 mins or until golden brown.
  • Step #8 To make the Topping: In a medium bowl, peanut butter, sliced peanuts, mix together the powdered sugar, egg whites, & 1/2 tsp of vanilla.
  • Step #9 Melt 1/4 c of butter or margarine & stir in theto mixture.
  • Step #10 Turn off oven & remove pan.
  • Step #11 Let cool for about 2 mins.
  • Step #12 Spread topping over pastry.
  • Step #13 Sprinkle top chocolate chips over topping & return to warm oven for 2 or 3 mins.
  • Step #14 Spread chocolate over topping, like a frosting.
  • Step #15 Let cool before cutting.
