1 lb dried black beans (soaked according to package directions) or 6 c canned black beans (rinsed & drained) .
1/2 c olive oil .
1/4 c fresh basil, corsely sliced, for serving .
6 garlic cloves, medium, smashed & peeled .
2 bunches fresh basil, large, leaves only, washed well .
3 1/2 c vegetable broth or chicken stock or water
Directions
Step #1 ~~If using dried beans,~~ in a medium saucepan, mix the beans with water to cover by 2 inches.
Step #2 Bring to a boil.
Step #3 Lower the heat & let simmer, partially covered, for 1 hr or until hte beans are very soft & beginning to burst.
Step #4 Remove from heat.
Step #5 In a mixer, puree the basil, garlic & 1/4 c olive oil.
Step #6 In a food processor/blender, working in batches if necessary, puree the cooked beans with their liquid (about 3 c), puree with the 3 1/2 c broth, or ~~ if using canned beans~~, stock or water.
Step #7 Scrape back into the saucepan (or canned beans, scrape into medium saucepan) & stir in the the pesto & salt.
Step #8 Heat through.
Step #9 Swirl in the remaining olive oil.
Step #10 Top each serving with a little sliced basil.
