Steak With Spicy Chili Sauce Recipe

Ingredients
  • 1/2 c red wine vinegar .
  • 2 shallots, minced .
  • 1 tbsp thai red chili paste .
  • 3/4 tsp salt .
  • 3 tbsps packed light brown sugar .
  • 1 1/2 tsps vegetable oil .
  • 1 garlic clove, minced .
  • 4 (4 oz) beef tenderloin steaks (1-inch thick)

Directions
  • Step #1 In a bowl, shallots, 1 tsp oil, brown sugar, garlic, mix the vinegar, chili paste, & ¼ tsp salt in a bowl.
  • Step #2 Add the steaks, turning to coat evenly.
  • Step #3 Remove the steaks, reserving the sauce; pat the steaks lightly with paper towels & sprinkle with remaining ½ tsp salt.
  • Step #4 Heat the remaining ½ tsp oil In a large-ish nonstick skillet over high heat until almost smoking.
  • Step #5 Arrange steaks in a single layer so that they don’t touch.
  • Step #6 Cook until done to taste, 4 mins on each side for med-rare; transfer steaks to a plate & cover to keep warm.
  • Step #7 Add the reserved sauce to the pan; bring to a boil over med-high heat & cook, stirring often, until thick & syrupy; about 3 mins; spoon sauce over steaks.
