Almond, Linseed And Coconut Oil Cookies (wheat Free) Recipe

Ingredients
  • 1/4 c coconut oil .
  • 17 glace cherries (optional) .
  • 1/3 c linseed sunflower seeds & almond mix .
  • 2 egg whites .
  • 1/2 tsp salt .
  • 1 2/3 c almond meal .
  • 1/2 c icing sugar .
  • 1 tsp almond extract .
  • 1 tsp vanilla essence .
  • 1/4 c wheat germ or oat flour

Directions
  • Step #1 Heat oven to 170degrees celsius & put some baking paper on a tray or two.
  • Step #2 whisk the egg whites until they are very soft peaks.
  • Step #3 put all the dry ingredients in a bowl.
  • Step #4 Pour in coconut oil (make sure it is soft) & the remaining ingredients except for the cherries & mix very well.
  • Step #5 Wet your hands & roll the mix into walnut sized balls & place on tray.
  • Step #6 Press down with a fork.
  • Step #7 If it sticks to the fork then fill a c with water & dip the fork in the water between balls.
  • Step #8 Lightly press a cherry into each cookie.
  • Step #9 You can cut them in half.
  • Step #10 Bake for about 20 mins or until the bottom is browning.
