Chicken, Pork And Potatoes In Peanut Sauce Recipe

Ingredients
  • 1 lb pork loin, cubed (I used thin-sliced boneless pork chops & it was fine) .
  • 2 eggs (hard-boiled & sliced) .
  • 2 tsps cumin .
  • 2 tsps paprika .
  • pepper .
  • 2-3 tbsps water .
  • 4 tbsps olive oil .
  • black olives, sliced .
  • 3 minced garlic cloves .
  • 1 onion, sliced .
  • 3/4 c roasted peanuts .
  • 2 chicken breasts, cubed .
  • 2 1/2 c vegetable stock or chicken stock .
  • parsley .
  • salt .
  • 1 1/4 lbs potatoes, peeled & thickly sliced .
  • Garnish

Directions
  • Step #1 If using salted peanuts, rinse & pat dry.
  • Step #2 Grind peanuts in food processor/blender till finely ground.
  • Step #3 (You can use unsalted, unroasted peanuts & toast them over low heat/flame in a frying pan for about 2-3 mins before grinding.

  • Step #5 Heat half the olive oil in a heavy skillet or dutch oven.
  • Step #6 Add the chicken pieces, season this with salt & pepper to taste & cook for about 10 mins, or till golden brown all over.
  • Step #7 Transfer chicken to a plate using a slotted spoon.
  • Step #8 Add the pork to the pan, seasoning with salt & pepper, & saute for 3-4 mins, till golden brown.
  • Step #9 Transfer to plate with cooked chicken.
  • Step #10 Add remaining oil to pan & lower heat.
  • Step #11 Stir in onion & cook for 5 mins, adding water if it begins to stick.
  • Step #12 Stir in garlic, paprika & cumin & cook for 1 min.
  • Step #13 Add the sliced potatoes, stir & cover the pan; cook for 3 mins.
  • Step #14 (potatoes that break down during boiling work best here - I used russets).
  • Step #15 Add the stock & ground peanuts; bring to a boil, then simmer carefully for 20-30 mins.
  • Step #16 Return chicken & pork to the pan & bring to a boil.
  • Step #17 Lower the heat, replace the lid & let simmer for 6-8 mins, till meat is cooked through.
  • Step #18 Avoid overcooking so that the meat does not become tough & stringy.
  • Step #19 Garnish the stew with egg slices, black olives & parsley if desired (I didn't use any of these & it was still very nice).
  • Step #20 Serve over cooked rice (unless you really don't like the idea of potatoes & rice together - I loved it!).
