Swordfish Steaks With Warm Basil Gazpacho Recipe

Ingredients
  • 3 tomatoes, peeled & sliced .
  • 1 pinch thyme .
  • 1/2 tsp cumin .
  • 2 tbsps olive oil .
  • 500 g swordfish steaks (or shark) .
  • 2 tbsps lemon juice .
  • 2 tbsps fresh basil (or 2 tsp dried) .
  • 1 c cucumbers, seeded, peeled & sliced .
  • 1 green onion, sliced .
  • 1 small onion, sliced .
  • 1 pinch pepper .
  • 2 tbsps garlic, minced

Directions
  • Step #1 In a large skillet, heat oil over medium high heat; cook garlic, stirring for a few seconds.
  • Step #2 Add fish; lightly brown on both sides.
  • Step #3 Add onion; cook 1 - 2 mins.
  • Step #4 Add tomatoes, cumin, basil, green onions, cucumber, lemon juice, thyme & pepper.
  • Step #5 Reduce heat & let simmer until fish flakes, testing with fork, about 5 mins.
