White Chocolate Cocomacs Recipe

Ingredients
  • 2 c flour .
  • 3/4 c macadamia nuts, sliced .
  • 1 tsp salt .
  • 1/4 c granulated sugar .
  • 1/4 c packed light brown sugar .
  • 2 1/2 tsps vanilla extract .
  • 2 large eggs .
  • 12 oz white chocolate, coarsely sliced .
  • 1 tsp baking soda .
  • 1 c packed brown sugar .
  • 1 1/3 c sweetened flaked coconut .
  • 1 c unsalted butter, softened

Directions
  • Step #1 In a medium bowl, stir this together the flour, baking soda & salt.
  • Step #2 In a large bowl, beat together the butter, brown sugars & sugar until well mixed.
  • Step #3 Beat in the eggs & vanilla until light & fluffy.
  • Step #4 Beat in the flour mixture just until no white streaks remain.
  • Step #5 Stir in the white chocolate, coconut & nuts until mixd.
  • Step #6 Cover up the dough with plastic wrap & put in the fridge at least 2 hrs.
  • Step #7 Preheat oven to 350°.
  • Step #8 Line a baking sheet with parchment paper.
  • Step #9 Using an ice cream scoop, pack the dough fully into the scoop & release onto baking sheet.
  • Step #10 Place 5 scoops on the sheet.
  • Step #11 Bake 18-20 mins, or until edges are golden.
  • Step #12 Remove from oven & cool cookies until just warm.
  • Step #13 Remove cookies to a wire rack to cool completely.
  • Step #14 Repeat with remaining dough.
