Spare Ribs With Saffron Rice Recipe

Ingredients
  • 2 lbs lean pork spareribs .
  • 2 1/2 c chicken bouillon, hot .
  • 2 garlic cloves, finely sliced .
  • 1 tbsp worcestershire sauce .
  • 1 c long grain rice .
  • 1 tbsp mustard .
  • 3 tbsps catsup .
  • 2 tbsps soy sauce .
  • 1 inch piece gingerroot, grated .
  • 1/4 c sliced almonds .
  • 3 tbsps clear honey .
  • 2 tbsps butter .
  • 2 oranges, peeled & sectioned & sliced .
  • 2 tbsps hoisin sauce .
  • salt & pepper .
  • 3 saffron strands, soaked in .
  • 1 green chili pepper, seeded & finely sliced .
  • 1 onion, sliced

Directions
  • Step #1 Place the ribs In a large-ish pan.
  • Step #2 Mix together the garlic, soy sauce, chili, ginger, tomato catsup, honey, hoisin sauce, mustard & Worcestershire sauce & pour over the ribs.
  • Step #3 Leave to marinate for 2-3 hrs.
  • Step #4 Cook in a preheated oven at 400F degrees F for 1 hr, turning 2-3 times.
  • Step #5 Reduce to 350 degrees F for a further 15-20 mins, until tender.
  • Step #6 Meanwhile, melt the butter in a pan & soften the onion.
  • Step #7 Add the rice & cook for 1 min.
  • Step #8 Strain the saffron bouillon over the rice & cook this until tender & the liquid is absorbed.
  • Step #9 Spice up, stir in the the oranges & almonds & heat carefully.
  • Step #10 Garnish the ribs & serve this with the rice.
