Southern Fried Catfish Recipe

Ingredients
  • peanut oil (for frying) .
  • 1 c all-purpose flour .
  • 1 c yellow cornmeal .
  • 2 lbs catfish fillets, split down the middle .
  • 1 c buttermilk .
  • 3/4 c beer, do NOT use dark beer .
  • 2 tbsps salt .
  • 1 tbsp paprika .
  • 2 tbsps fresh ground black pepper .
  • 1/2 c rice flour

Directions
  • Step #1 Combine buttermilk & beer in a nonreactive bowl.
  • Step #2 Add the catfish fillets & put in the fridge for 2 hrs, BUT NO LONGER.
  • Step #3 Combine cornmeal, rice flour, paprika, salt, all-purpose flour, & pepper in a small bowl & mix well.
  • Step #4 Drain fillets & toss them lightly in the breading mixture to coat them.
  • Step #5 Place the breaded fillets in a single layer on a baking sheet lined with wax paper & don't let the fillets touch.
  • Step #6 Refrigerate for 30 mins.
  • Step #7 Preheat the oven to 200 degrees F.
  • Step #8 On the stove, pour enough oil into a heavy skillet so that it is 2 inches deep & heat it so that it is 355 degrees F.
  • Step #9 on a frying thermometer.
  • Step #10 Carefully drop fillets in, 2 at a time & fry them for about 2 1/2 mins on each side or until they are just golden.
  • Step #11 Remove the fillets with a slotted spoon & place them on paper towels to drain.
  • Step #12 Transfer the fillets to a platter & keep warm in the preheated oven until they are all fried.
  • Step #13 Work quickly so that they don't get overdone & serve as soon as possible.
