Linguine With Salmon And Tuna Recipe

Ingredients
  • 1/2 tsp thyme .
  • 3/4 tsp oregano .
  • 1 (16 oz) box linguine (I preffer Barilla) .
  • 2 tbsps extra virgin olive oil .
  • with shredded carrots (hold) .
  • 1 tsp table salt .
  • 1 tbsp course black pepper .
  • 1 large yellow onion, sliced .
  • 1/2 c organic spinach leaves (sliced) .
  • 1/4 c white wine vinegar .
  • 1/2 tbsp parsley .
  • 1 (12 oz) can albacore light tuna (discard juice) .
  • 3 garlic cloves, minced .
  • 1/2 tbsp basil .
  • 1 (26 oz) can cream of mushroom soup .
  • 4 green onions, sliced (hold) .
  • 1 c 2% low-fat milk .
  • 1 (15 oz) can pink salmon (reserve juice) .
  • 1 tbsp kosher salt .
  • 3 small red potatoes, cut into small cubes .
  • 1 tsp crushed red pepper flakes .
  • 1 tbsp butter

Directions
  • Step #1 Drain salmon (remove skin & bones) & tuna.
  • Step #2 Mix together in a 2qt.
  • Step #3 bowl & hold.
  • Step #4 Peel, wash & cube red potatos.
  • Step #5 Boil in a 2qt pot for 15 mins or until tender & hold.
  • Step #6 Do not over cook; you don't want them too soft.
  • Step #7 Heat oil in a 12" skillet over med-heat/flame.
  • Step #8 Added sliced onion, course black pepper, parsley, kosher salt, basil, thyme, garlic, crushed red pepper flakes, & oregano; saute' 3 mins.
  • Step #9 Add white wine vinegar & continue to saute' for 3 more mins.
  • Step #10 Add salmon & tuna, stir thoroughly for 1 min.
  • Step #11 Reduce heat to medium low & cook for 3 mins (frequently stirring), covered.
  • Step #12 Add cream of mushroom soup, green onions, spinach & carrots & thoroughly stir in theches Increase heat to medium & cook for 3 mins, milk, covered.
  • Step #13 Stir in salmon juice for extra flavor.
  • Step #14 Reduce heat to medium low & cook for 25 mins, covered, stirring occassionaly.
  • Step #15 While the slamon & tuna cook, put 6 c of water in a 6qt.
  • Step #16 pot with the butter & table salt; bring to a boil.
  • Step #17 Add the linguine & boil for 10 mins, or until tender.
  • Step #18 Serve the salmon & tuna sauce over the linguine.
  • Step #19 You can serve a salad and/or garlic toast with it.
