Portobellos And Spinach With Sesame Dressing Recipe

Ingredients
  • 2 tbsps toasted sesame seeds .
  • 3 tbsps seasoned rice vinegar .
  • Roasted Portobellos .
  • crushed garlic, to taste (optional) .
  • 1 1/2 tbsps tahini .
  • 1 1/2 tsps roasted sesame oil .
  • 1 1/2 tsps light brown sugar .
  • Sesame Dressing .
  • 4 (9 oz) bags spinach .
  • 1 1/2 tbsps low sodium soy sauce .
  • 1 garlic clove, peeled (or more) .
  • 1 tbsp canola oil .
  • 1 lb portabella mushrooms, stems removed (about 6 medium)

Directions
  • Step #1 To make sesame dressing: Blend all of the ingredients in a mixer until smooth.
  • Step #2 Set aside.
  • Step #3 To make roasted portobellos: Preheat the oven to 400F degrees.
  • Step #4 Coat baking sheet with cooking spray.
  • Step #5 Place mushrooms on prepared baking sheet.
  • Step #6 Brush with oil & sprinkle with crushed garlic (if using).
  • Step #7 Bake 20 mins.
  • Step #8 Cool & slice.
  • Step #9 Heat 2 Tbsp of water & 2 bags spinach In a large-ish pot over high heat.
  • Step #10 Cover up & steam 2 to 3 mins or until wilted.
  • Step #11 Repeat with remaining spinach.
  • Step #12 Cool, then squeeze out liquid.
  • Step #13 Either toss with mushrooms & dressing or layer mushrooms on top of spinach & spoon dressing on top.
  • Step #14 Sprinkle top with sesame seeds & serve.
