Salmon And Dill Quiche Recipe

Ingredients
  • 1 tbsp dill, finely sliced .
  • 1 1/2 tsps butter .
  • 1 pie shell .
  • 1 1/2 tsps Dijon mustard .
  • 2 tbsps white wine vinegar .
  • 6 oz salmon fillets .
  • 3 eggs .
  • 1/2 tsp salt .
  • 2 tbsps parsley, finely sliced .
  • 1 tbsp shallots, sliced .
  • 6 oz ricotta cheese .
  • cream .
  • 5 peppercorns .
  • 1 bay leaf .
  • 2 oz cheddar cheese, grated

Directions
  • Step #1 Place the salmon in a shallow pan.
  • Step #2 Add enough water to just cover the fish.
  • Step #3 Spice up with vinegar, bay leaf & peppercorns.
  • Step #4 Poach carefully until the salmon tests just done.
  • Step #5 Do not overcook! Flake the salmon into pieces, & mix in herbs.
  • Step #6 Saute shallots in butter until lightly browned.
  • Step #7 Remove from the heat & mix with salmon & herbs.
  • Step #8 Beat eggs with the half & half, mustard, & salt.
  • Step #9 Put salmon mixture in the pie shell.
  • Step #10 Add the ricotta followed by the egg mixture.
  • Step #11 Sprinkle top the cheddar cheese over the top.
  • Step #12 Bake 10 mins at 450°F then turn the oven down to 350°F.
  • Step #13 , bake this until the filling is firm (about 20 mins longer).
  • Step #14 Let the pie cool for a few mins before slicing.
