Chicken Enchilada Casserole Recipe

Ingredients
  • 12 corn tortillas .
  • 1 c grated cheddar cheese .
  • 2 chicken breasts, sliced .
  • 5 oz black olives .
  • 5 oz sliced green onions .
  • 1 c monterey jack cheese .
  • 1/2 c sliced onions .
  • 2 (10 1/2 oz) cans cream of chicken soup .
  • 1 c sour cream

Directions
  • Step #1 Combine all ingredients.
  • Step #2 Set aside 1 can cream of chicken soup.
  • Step #3 Fill tortillas with 1 tbsp mixture.
  • Step #4 Roll up tortillas in large baking dish, sprayed with vegetable spray.
  • Step #5 Mix remaining can of soup with 1/2 can milk & pour over tortillas.
  • Step #6 Sprinkle top cheese over tortillas.
  • Step #7 Bake @ 350° for 45 mins; 60 mins if frozen.
