Breadfruit Cake Recipe

Ingredients

2 tsps baking powder .
1/2 c nuts, sliced .
2 tsps baking soda .
1 3/4 c sugar .
1 tsp vanilla .
1 1/2 c salad oil .
4 eggs .
2 c whole wheat flour or flour .
2 tsps pumpkin pie spice .
3 c ripe breadfruit, peeled & mashed (1 1/2 lbs) .
1 tsp salt

Directions

Step #1 Preheat oven to 375°F.
Step #2 In a large mixing bowl, mix together the dry ingredients.
Step #3 Add oil, & stir well.
Step #4 Beat in eggs & vanilla & continue beating with electric mixer.
Step #5 Beat in breadfruit until smooth.
Step #6 Remove fibrous breadfruit from beater.
Step #7 Stir in nuts.
Step #8 Bake in 3 long pans for 45 mins.
