Ancient Roman Pear Patina Recipe

Ingredients
  • water or white wine .
  • 1/8 tsp pepper .
  • 1/2 c vin santo wine .
  • 4 pears .
  • 1 1/2 c milk (optional) .
  • 1 tbsp olive oil .
  • 1/8 tsp cumin .
  • 1 tbsp honey .
  • 3 eggs

Directions
  • Step #1 Poach pears in water or white wine.
  • Step #2 When done peel & core them.
  • Step #3 Crush into puree & mix with honey, pepper, cumin & Vin Santo.
  • Step #4 Beat the eggs, adding the milk if desired.
  • Step #5 Then mix this into the pear mixture with the olive oil.
  • Step #6 Pour into a casserole & bake for around 20 mins at 350°F.
  • Step #7 Ancient Roman Pear Patina Recipe: NOTE Garum is fish sauce.
  • Step #8 A pear patina: Grind boiled & cored pears with pepper, honey, cumin, passum, garum, & a bit of oil.
  • Step #9 When the eggs have been added, make a patina, sprinkle pepper over, & serve.
