Tamale Pie With Cornmeal Cheese Crust Recipe

Ingredients
  • 1/3 c milk .
  • 1 tsp jalapeno peppers, finely sliced .
  • 1 c cheddar cheese, shredded .
  • Crust .
  • 1 c yellow cornmeal .
  • 1 tsp garlic, minced .
  • 1 1/2 tsps cumin, ground .
  • salsa .
  • 2 tsps vegetable oil .
  • 1/2 c onions, sliced .
  • 1 egg .
  • 1/2 c green bell peppers, sliced .
  • Filling .
  • 1/8 tsp cayenne pepper .
  • 1 (8 oz) can tomato sauce .
  • 1/2 lb ground turkey breast .
  • 1 c cheddar cheese, shredded .
  • 2 tsps chili powder .
  • sour cream .
  • 1 c whole kernel corn, drained .
  • 1 tsp sugar

Directions
  • Step #1 Heat oven to 350°F Combine cornmeal & sugar; stir in the 1 c of cheese, milk, egg & oil.
  • Step #2 Stir just until moistened.
  • Step #3 Press mixture on bottom & up sides of 9" pie plate sprayed with non-stick cooking spray.
  • Step #4 In 10 inch skillet, green pepper, cook ground turkey, onion, garlic & jalapeno pepper over med-heat/flame until turkety is no longer pink.
  • Step #5 Drain.
  • Step #6 Stir in tomato sauce, corn, chili powder, cumin & cayenne pepper.
  • Step #7 Spoon turkey mixture into cornmeal crust.
  • Step #8 Bake at 350F, 30-35 mins.
  • Step #9 Remove from oven; sprinkle with 1 c cheese.
  • Step #10 Return to oven & bake this until cheese melts.
  • Step #11 Let stand 5 min before serving.
  • Step #12 Serve with sour cream & salsa if desired.
