Tangerine Scones Recipe

Ingredients
  • 4 tangerines .
  • 2 c all-purpose flour .
  • 2 tbsps granulated sugar .
  • 2 1/2 tsps fresh-squeezed lemon juice .
  • 2 tsps baking powder .
  • 1/3 c confectioners' sugar .
  • 2 egg whites, beaten .
  • 1/4 c margarine, chilled & cut into slices .
  • 2 tsps grated lemon peel .
  • 1 tsp ground cardamom .
  • 1/2 tsp baking soda .
  • 1/2 tsp salt .
  • Glaze .
  • 1/2 c nonfat vanilla yogurt

Directions
  • Step #1 In bowl, mix flour, baking powder, cardamom, sugar, baking soda & salt.
  • Step #2 Stir to mix.
  • Step #3 A.
  • Step #4 dd butter or margarine & mix in using pastry mixer or two knives until crumbly then set aside.
  • Step #5 Wash & peel tangerines.
  • Step #6 Cut into 1/2-inch pieces, removing seeds & drain well.
  • Step #7 Stir into dry mixture.
  • Step #8 In small bowl, mix yogurt & eggs whites.
  • Step #9 Blend into dry ingredients, dough will be soft.
  • Step #10 Flour a cutting board & place dough on board.
  • Step #11 Sprinkle top top this with extra flour & pat out into a 9-inch round.
  • Step #12 Cut into twelve wedges.
  • Step #13 Spray a cookie sheet with nonstick cooking spray.
  • Step #14 Using a spatula, place scone wedges on cookie sheet & bake in preheated 350 degree oven for 18-22 mins until golden brown.
  • Step #15 Cool slightly.
  • Step #16 Glaze: In small bowl, mix confectioners sugar, lemon peel & juice.
  • Step #17 Brush glaze on each scone & serve.
