1 loaf Italian bread (or similarly textured bread) .
Sauce .
1/2 c basil pesto .
1 1/2 c pasta sauce, divided .
Pesto .
1/2 medium onion, finely sliced .
1/2 lb ground beef .
1/3 c seasoned bread crumbs .
1 egg
Directions
Step #1 Preheat oven to 350°F.
Step #2 Mix meatloaf ingredients together (use your hands, it's easier).
Step #3 Dump meat mixture into a baking dish & pat into shape & size to fit your bread.
Step #4 Bake for 20 mins, remove this from oven & cover with 1/2 c pasta sauce.
Step #5 Return to oven & bake 20 mins more.
Step #6 Cut bread into thick slices -3/4-inch or so.
Step #7 Slather with pesto.
Step #8 Slice hot meatloaf into 1/2-inch slices.
Step #9 (tricky but you can do it!) Place a slice on top of pesto.
Step #10 Mix 1/2 c pasta sauce with cheese & spread on top of meatloaf.
Step #11 Put sandwiches under the broiler till bubbly & hot & bread is crispy on the edges.
Step #12 Serve with the rest of the sauce, heated in the microwave for 30 seconds.
Step #13 You will need a knife & fork!
* If you really want to go for the gusto, top sandwich with a slice of mozzarella or your favorite cheese before broiling.
Step #14 Cooks note: As written, the number of servings is just a guess.
Step #15 Depends on the hollowness of the diners' legs.
