Date Nut Mayonnaise Cake Recipe

Ingredients
  • 3/4 tsp lemon zest
  • 2 c all-purpose flour
  • 1 c mayonnaise
  • 1 c boiling water
  • 1 c white sugar
  • 2 tsps baking soda
  • 1/2 c butter
  • 1 c dates, pitted & sliced
  • 1/4 c water
  • 1 c white sugar
  • 1 egg, beaten
  • 3 tbsps lemon juice
  • 1 c sliced walnuts

Directions
  • Step #1 Preheat oven to 350 degrees F (175 degrees C).
  • Step #2 Grease & flour a 9 x 13 inch pan.
  • Step #3 In a large bowl, mix dates, 1 tsp soda, & boiling water.
  • Step #4 Cool.
  • Step #5 Add flour, 1 c sugar, mayonnaise, & remaining 1 tsp soda.
  • Step #6 Use medium speed of mixer, & beat until mixture is well mixed.
  • Step #7 Stir in nuts.
  • Step #8 Spread batter in prepared pan.
  • Step #9 Bake for 45 mins, or until a toothpick inserted in center comes out clean.
  • Step #10 While the cake is baking, prepare the lemon sauce.
  • Step #11 Mix beaten egg & 1/4 c water; place this in a medium saucepan.
  • Step #12 Add 1 c sugar, butter or margarine, & lemon peel & juice.
  • Step #13 Heat to boiling over med-heat/flame, stirring constantly.
  • Step #14 Serve sauce over warm cake.
  • Step #15 Refrigerate any leftover sauce.
