Liqueur Vinegar Pie Recipe

Ingredients
  • 6 tbsps apple cider vinegar .
  • 2 c water .
  • 1 pre made pie crust, blind baked in 9-inch pan & cooled .
  • 2 tsps limoncello or other lemon-flavored liqueur or lemon extract .
  • 2 c sugar .
  • 1/2 c all-purpose flour .
  • 2 eggs, beaten until frothy

Directions
  • Step #1 Preheat the oven to 350 degrees F.
  • Step #2 In a heavy 2-quart saucepan, bring the water to a boil.
  • Step #3 In a small bowl, mix the flour & sugar, tossing with a fork to mix.
  • Step #4 Add the flour-sugar mixture to boiling water & cook, whisking often, until thickened, about 6 mins.
  • Step #5 Remove from heat & slowly add the eggs, whisking vigorously.
  • Step #6 Return to medium-low heat & cook, until velvety smooth, whisking, about 3 mins.
  • Step #7 Add the vinegar & lemon extract & whisk just to mix.
  • Step #8 Pour into the cooled pastry shell & put in the fridge until set, about 3 hrs.
