Lemon Fried Chicken Recipe

Ingredients
  • 6 sprigs fresh Italian parsley, for garnish .
  • 1 (3 1/2 lb) roasting chickens, cut into 8 pieces .
  • 1 c all-purpose flour (for dredging, approximately 1 c) .
  • 1/4 c extra-virgin olive oil .
  • 2 c olive oil (approximately 2 c) .
  • 1/4 c fresh lemon juice (2 to 3 lemons, depending on size) .
  • 1 tsp fresh ground black pepper .
  • 1 1/2 tsps salt .
  • lemon wedges, for garnish

Directions
  • Step #1 In a large casserole dish, whisk the lemon juice, extra-virgin olive oil, & salt to mix.
  • Step #2 Add the chicken pieces & turn to coat.
  • Step #3 Cover up & put in the fridge at least 2 hrs & up to 1 day, turning the chicken pieces every once in awhile.
  • Step #4 In a large cast iron frying pan or other heavy frying pan, add enough oil to come 1/3-inch up the sides of the pan.
  • Step #5 Heat the oil over med-heat/flame.
  • Step #6 Meanwhile, drain the marinade from the chicken.
  • Step #7 Pat the chicken dry with paper towels.
  • Step #8 Sprinkle top with pepper.
  • Step #9 Working in 2 batches, dredge the chicken in the flour to coat completely.
  • Step #10 Shake off the excess flour & then carefully add the chicken to the hot oil.
  • Step #11 Fry until the chicken is golden brown & just cooked through, turning every once in awhile, about 25 mins.
  • Step #12 Using tongs, transfer the chicken to a paper towel-lined plate to drain the excess oil.
  • Step #13 Arrange the fried chicken on a warm platter & serve this with the lemon wedges & parsley.
