Ingredients
12 slices swiss cheese .
1/4 tsp pepper .
1/2 tsp salt .
2 tbsps olive oil .
6 boneless skinless chicken breast halves .
1 c chili sauce .
24 slices French bread .
1/2 c olive oil .
1 tbsp Dijon mustard .
2 tbsps red wine vinegar .
shredded lettuce .
1 c seedless red raspberry jam
Directions
Step #1 In a small saucepan, mix the first four ingredients.
Step #2 Bring to boil, reduce heat & let simmer, uncovered for 2 mins.
Step #3 Set aside 1 c for serving & remaining for basting.
Step #4 Coat grill rack with nonstick spray & heat grill.
Step #5 Flatten chicken breasts to 1/4 inch thick.
Step #6 Cut in in half width wise; place this in large ziplock bag.
Step #7 Add 2 tbsp of olive oil, salt & pepper.
Step #8 Seal bag & turn to coat; brush remaining oil on both sides of bread.
Step #9 Grill chicken, uncovered, over med-heat/flame for 5-7 mins on each side, basting frequently with raspberry sauce.
Step #10 Remove & keep warm.
Step #11 Grill bread, uncovered, for 1-2 mins or until lightly brown on one side.
Step #12 Turn & top half of the breqad with a slice of cheese.
Step #13 Grill 1-2 mins longer or until bottom of bread is toasted.
Step #14 Place a piece of chicken, lettuce & reserved raspberry sauce on half of bread slices; top this with reamining bread.
