Ingredients
1/2 tsp mild curry powder .
1/2 tsp sugar .
2 garlic cloves .
6 oz tilapia fillets .
1/2 lime, juice of .
1 (3 oz) carrots .
3/4 c water .
1 (3 1/2 oz) leeks .
1/4 tsp ground cayenne pepper .
4 tbsps dry sherry .
2 small egg yolks .
3/4 c fish stock .
1/8 tsp saffron .
Soup .
2 anchovy fillets .
Condiment .
1 oz fresh ginger .
4 small whole fish (see note, whole gutted & head removed, each herring has a weight of about 2.5 to 3 oz) .
6 oz salmon fillets .
1 (1 oz) celeriac .
French baguettes .
4 tiger shrimp .
salt & pepper .
3 tbsps olive oil .
2 tomatoes (about 1/2 lb in total) .
2 tbsps olive oil .
1 (3 oz) onions .
Aioli
Directions
Step #1 Cut the vegetables for the soup into pieces (tomatoes, celeriac, carrot, onion, leek, ginger).
Step #2 Clean the herrings, remove dorsal fin & cut them into larger pieces.
Step #3 If you like you can leave the tail fin.
Step #4 Heat olive oil in pot & sear herring on both sides for about 1 min.
Step #5 If you didn't remove the tail fins, remove these four pieces & set aside.
Step #6 Add the anchovy fillets & sear for another min.
Step #7 Add all the vegetables, curry powder & cayenne pepper powder & cook for about 3 mins.
Step #8 Stir well.
Step #9 Add fish broth & water & cook , reduce heat to low & cook for about 1 hr & stir from time to time.
Step #10 While the soup is cooking cut the fish filets into bite-sized pieces.
Step #11 Clean the tiger prawns.
Step #12 Set aside.
Step #13 For Aioli cut the garlic into pieces & add it together with olive oil & egg yolks into your food processor/blender.
Step #14 Mix until smooth & creamy.
Step #15 Salt to taste.
Step #16 Put Aioli into a small bowl & set aside.
Step #17 Cut french bread into slices & toast until golden brown.
Step #18 Set aside.
Step #19 After 1 hr cooking take soup from heat & puree soup until smooth.
Step #20 You can do this in your food processor/blender.
Step #21 The soup should be very smooth & creamy.
Step #22 You can sieve the soup to remove all remaining pieces & fish bones.
Step #23 Put soup on oven over low heat/flame again & add sherry, lime juice, sugar, & saffron.
Step #24 Add salt & pepper to taste.
Step #25 Add salmon & tilapia pieces, tiger prawns, & the tail pieces of the herrings.
Step #26 Let simmer for about 10 mins or until fish is done & flakes easily.
Step #27 Divide the soup into bowls & serve this with Aioli & toasted french bread on the side.
Step #28 NOTE on "small whole fish": I use herrings.
Step #29 NOTE on fish tails: I don't remove the tail fin & use these pieces for decoration.
Step #30 If you don't like them, remove them.
Step #31 In this case you can leave all herring pieces in the soup.
