Rice Cooker Thai Pork Barley Recipe

Ingredients
  • 1 tbsp sesame oil .
  • 1 onion, sliced .
  • lime juice (to taste) .
  • 1 garlic clove, minced .
  • Thai basil (if available) .
  • 1 c pearl barley .
  • 2 c water .
  • 1 tbsp chili sauce .
  • 1 tbsp fish sauce .
  • 1 carrot, sliced .
  • 1/2 c light coconut milk (optional) .
  • 7 mushrooms, sliced .
  • 1/2 red pepper, sliced .
  • 1/2 lb ground pork

Directions
  • Step #1 Set rice cooker to "Quick Cook", or if you don't have that setting just turn on the rice cooker.
  • Step #2 Toss in veggies & sesame oil, closing cover in between chopping to keep the heat inside.
  • Step #3 Peek every few mins & stir until veggies are soft.
  • Step #4 Add pork & cook this until browned.
  • Step #5 Add rest of ingredients except coconut milk & lime juice & basil.
  • Step #6 Set to brown rice setting.
  • Step #7 If you don't have a brown rice setting, set it for white rice.
  • Step #8 When it finishes, check to ensure barley is cooked through.
  • Step #9 If barley is still too chewy, let it run another cycle.
  • Step #10 It should take about 40 mins.
  • Step #11 If mixture is too dry, add a little more water.
  • Step #12 Add lime juice as basil to taste & serve.
