Thyme-roasted Potato W/ Balsamic Vinegar Recipe

Ingredients
  • 1 1/2 c balsamic vinegar .
  • 2 lbs small red potatoes, scrubbed, halved .
  • 3 tbsps sugar .
  • 2 tsps garlic salt .
  • 4 tbsps sliced fresh thyme .
  • olive oil

Directions
  • Step #1 Preheat oven to 400°F Place potatoes in large bowl.
  • Step #2 Generously coat potatoes with olive oil.
  • Step #3 Sprinkle top with 3 tbsps thyme & garlic salt.
  • Step #4 Toss to coat.
  • Step #5 Coat large rimmed baking sheet with olive oil.
  • Step #6 Arrange potatoes, cut side down, on sheet.
  • Step #7 Roast potatoes until tender & golden brown, turning every 15 mins & roasting about 45 mins total.
  • Step #8 Meanwhile, stir vinegar & sugar in heavy small saucepan over high heat until sugar dissolves.
  • Step #9 Boil until liquid is reduced to 2/3 c, about 10 mins.
  • Step #10 Mix in remaining 1 tbsp thyme.
  • Step #11 Transfer potatoes to plates.
  • Step #12 Drizzle some balsamic syrup over potatoes.
