Almond Berry Muffins Recipe

Ingredients
  • 1/2 tsp almond extract .
  • 1 tsp baking powder .
  • 1 1/2 c sugar, divided .
  • 1 1/4 c sliced almonds, divided .
  • 1/4 c butter, softened .
  • 2 eggs .
  • 1/4 tsp baking soda .
  • 1 egg white, lightly beaten .
  • 2 c all-purpose flour .
  • 1/2 tsp salt .
  • 1/4 c shortening .
  • 1 1/4 c fresh strawberries, sliced .
  • 3/4 c buttermilk .
  • 1 tsp vanilla extract

Directions
  • Step #1 In a bowl, mix 1 c almonds & egg white.
  • Step #2 Add 1/2 c sugar; toss to coat.
  • Step #3 Spoon into a greased 15-in.
  • Step #4 x 10-in.
  • Step #5 x 1-in.
  • Step #6 baking pan.
  • Step #7 Bake at 350° for 9-11 mins or until golden brown, stirring every once in awhile.
  • Step #8 In a large mixing bowl, cream shortening, butter & remaining sugar until light & fluffy.
  • Step #9 Add eggs, one at a time, beating well after each addition.
  • Step #10 Beat in extracts.
  • Step #11 Combine the flour, baking powder, salt & baking soda; add to the creamed mixture alternately with buttermilk.
  • Step #12 Fold in the strawberries & remaining almonds.
  • Step #13 Fill greased or paper-lined muffin c two-thirds full.
  • Step #14 Sprinkle top with sugared almonds.
  • Step #15 Bake at 350° for 20-25 mins or until a toothpick comes out clean.
  • Step #16 Cool for 5 mins before removing from pans to wire racks.
