Step #1 Toast the Quinoa in a frying pan for about 5 mins or until it begins to pop.
Step #2 Bring 2 c water to a boil in a saucepan & add toasted quinoa.
Step #3 Cover up & let simmer over a medium heat for about 15 - 20 mins or until water is absorbed.
Step #4 Put quinoa In a large-ish bowl & let cool.
Step #5 Heat 1 tbsp oil in a frying pan & add onion, fry onion over a medium heat until the onion begins to soften, add curry powder & cook for another 2 mins.
Step #6 Remove from heat & set aside.
Step #7 Whisk together in a bowl the remaining oil, lemon juice, mustard, salt & pepper & pour over quinoa.
Step #8 Stir in reserved onion mixture, green onion, carrot, cashews, red pepper, apricots, & parsley.
