Curried Quinoa Salad Recipe

Ingredients
  • 1 tsp Dijon mustard .
  • 1 tbsp parsley, sliced .
  • 1/4 tsp salt & pepper, each .
  • 1/2 c carrots, finely sliced .
  • 2 tbsps lemon juice .
  • 1/2 c onions, sliced .
  • 1 tsp curry powder .
  • 1/4 c dried apricots, sliced .
  • 1 c quinoa, rinsed & drained .
  • 1/4 c toasted cashews, sliced .
  • 1 tbsp olive oil .
  • 1/2 red pepper, sliced .
  • 1/3 c olive oil .
  • 2 tbsps green onions, sliced

Directions
  • Step #1 Toast the Quinoa in a frying pan for about 5 mins or until it begins to pop.
  • Step #2 Bring 2 c water to a boil in a saucepan & add toasted quinoa.
  • Step #3 Cover up & let simmer over a medium heat for about 15 - 20 mins or until water is absorbed.
  • Step #4 Put quinoa In a large-ish bowl & let cool.
  • Step #5 Heat 1 tbsp oil in a frying pan & add onion, fry onion over a medium heat until the onion begins to soften, add curry powder & cook for another 2 mins.
  • Step #6 Remove from heat & set aside.
  • Step #7 Whisk together in a bowl the remaining oil, lemon juice, mustard, salt & pepper & pour over quinoa.
  • Step #8 Stir in reserved onion mixture, green onion, carrot, cashews, red pepper, apricots, & parsley.
  • Step #9 Serve.
