Chilli & Cheese Cornbread (with Polenta) Recipe

Ingredients
  • 2 tsps baking powder .
  • 1 tsp salt (although it works fine without, in my opinion) .
  • 1 red chili pepper (I use medium-hot ones) .
  • 300F ml milk (I use semi-skimmed) .
  • 250 g grated cheese (pick your fave!) .
  • 2 tbsps brown sugar (I use demerera) .
  • 2 eggs .
  • 125 g plain flour .
  • 60 g butter (or marg. melted) .
  • 175 g polenta

Directions
  • Step #1 Pre-heat the oven to 200c/400f.
  • Step #2 Mix the polenta, sugar, flour, baking powder & salt in a bowl.
  • Step #3 Add the milk, eggs & butter to the dry ingredients & mix well until they become a batter.
  • Step #4 Core & de-seed the chilli & chop it finely.
  • Step #5 Grate the cheese & add it to the batter with the chilli.
  • Step #6 Grease a 7 inch baking tin (I use 1 cal spray) & pour the mixture into the tin.
  • Step #7 Bake for 25-30 mins until golden.
