Shrimp Pasta With Lemon Alfredo Sauce Recipe

Ingredients
  • 4 tbsps lemon juice concentrate .
  • 1/2 (8 1/2 oz) bottle sun-dried tomatoes packed in oil .
  • 1/2 lb large shrimp .
  • 8 oz dry pasta (linguine, fettuccini or spaghetti) .
  • 1 (15 oz) can artichoke hearts, quartered .
  • 1 (16 oz) jar alfredo sauce (Ragu or Five Brothers)

Directions
  • Step #1 Peel & de-vein shrimp.
  • Step #2 Sauté shrimp in 2T oil from sun dried tomatoes (don't over cook), & set aside.
  • Step #3 Bring 2 Qt water to a boil, add pasta & cook according to package directions.
  • Step #4 Add 1/2 jar sun dried tomatoes (oil & all) to the boiling water.
  • Step #5 Warm the alfredo sauce adding 4T lemon juice concentrate.
  • Step #6 Place a colander in the sink & put artichokes into it.
  • Step #7 Drain pasta over the artichoke hearts.
  • Step #8 (This gets them warm.
  • Step #9 Divide pasta onto four large plates.
  • Step #10 Place equal amounts pasta, artichoke hearts & sundried tomatoes on each plate.
  • Step #11 Pour sauce over pasta.
  • Step #12 Top each plate with equal amounts of shrimp & serve hot.
