Chicken Paprikas Recipe

Ingredients
  • 3 1/2 lbs roasting chickens, cut into 8 serving pieces .
  • Thickening .
  • 1 medium tomato, sliced .
  • 1/2 c sour cream .
  • 2 garlic cloves, peeled & crushed .
  • 2 anaheim green peppers or cubanelle green peppers, seeded & coarsely sliced .
  • 3-4 tbsps freshly rendered lard or oil .
  • 1 tbsp Hungarian paprika .
  • 1 c chicken stock .
  • 1 tsp salt .
  • 1/8 tsp fresh ground black pepper (to taste) .
  • 2 tbsps all-purpose flour .
  • 3 yellow onions, peeled & sliced

Directions
  • Step #1 Heat a 6-quart heavy stove-top casserole adn add the lard or oil & paprika.
  • Step #2 Saute the paprika for about 1 min & add the onions.
  • Step #3 Saute for a few mins & add the remaining ingredients, except the thickening, to the pot.
  • Step #4 Bring to a simmer & cool, covered, for about 45 mins to one hr or until all is tender.
  • Step #5 Remove the chiken pieces & set aside.
  • Step #6 Mix the sour cream & flour well, using a wire whisk.
  • Step #7 Add 1 c of the gravy from the pot to the cream & stir while it thickens.
  • Step #8 Return the chicken to the pot & restore the heat.
  • Step #9 Serve over Hungarian Dumplings.
  • Step #10 NOTE: for a very delicious Veal Paprikas, use the above recipe substituting 2 1/2 lbs.
  • Step #11 of veal stew meat for the chicken.
