Salmon Crèpes With Tarragon Sauce Recipe

Ingredients
  • CREPES .
  • 1 egg, slightly beaten .
  • 1 1/2 c half-and-half .
  • 3 tbsps butter .
  • 2 c monterey jack cheese, shredded .
  • 1 dash cayenne pepper .
  • 1 c all-purpose flour .
  • 4 green onions, thinly sliced .
  • 1/4 c dry white wine .
  • 3 tbsps all-purpose flour .
  • 3 eggs .
  • SAUCE .
  • 1/4 tsp salt .
  • 1/2 c soft breadcrumbs .
  • 1 (15 1/2 oz) can salmon, drained & flaked .
  • 3/4 c water .
  • 1/4 c fresh parsley, finely sliced .
  • 1/2 tsp dry mustard .
  • 1/4 tsp dried tarragon leaves .
  • 2/3 c milk .
  • 3/4 tsp salt .
  • 2 tbsps salad oil .
  • FILLING .
  • 1/8 tsp white pepper

Directions
  • Step #1 MAKE CRÈPES:.
  • Step #2 Combine all ingredients in a mixer & whirl at high speed until well mixd.
  • Step #3 Refrigerate 1 hr.
  • Step #4 Make crèpes using a lightly oiled 7-in pan.
  • Step #5 MAKE FILLING:.
  • Step #6 Lightly mix salmon, pepper, green onions, egg & crumbs.
  • Step #7 Fill & roll crepes, using about 2 tbsps salmon mixture for each.
  • Step #8 Place side-by-side in a buttered 13x9 baking dish.
  • Step #9 MAKE SAUCE:.
  • Step #10 Melt butter in a 2-quart saucepan, then stir in the flour.
  • Step #11 Cook until bubbly.
  • Step #12 Add salt, dry mustard, tarragon & cayenne.
  • Step #13 Remove from heat.
  • Step #14 Gradually stir in the half-and-half & wine.
  • Step #15 Return to heat.
  • Step #16 Cook, stirring constantly until thick.
  • Step #17 Mix in parsley.
  • Step #18 BAKE:.
  • Step #19 Pour sauce over crèpes Sprinkle top evenly with cheese.
  • Step #20 Bake at 400° for 20 to 25 mins until heated through & lightly browned.
