Garlic Chili-beef Enchiladas Recipe

Ingredients
  • 3 c grated cheddar cheese, divided .
  • 1 onion, finely sliced .
  • 2-3 tbsps minced fresh garlic .
  • 2 tbsps flour .
  • 1 tbsp chili powder (or to taste) .
  • 1 tsp black pepper .
  • 1 (14 oz) can stewed tomatoes (slightly drained) .
  • 1/2 tsp cayenne pepper (or to taste, or use Tabasco sauce to taste) .
  • 8 (7 inch) flour tortillas .
  • 2-3 tbsps oxo beef bouillon powder (or use 3 small packages) .
  • SAUCE .
  • 2 tbsps flour .
  • 1 tbsp seasoning salt (can use more to taste) .
  • 1/3 c flour, plus .
  • 1-2 jalapeno pepper, seeded & finely sliced .
  • 1 lb ground beef .
  • 1-3 tbsp chili powder .
  • 1 tsp cumin .
  • 1 tsp dried oregano .
  • 1/3 c butter .
  • 2 tbsps Worcestershire sauce .
  • 2 tsps cumin (or to taste) .
  • 1 3/4 c canned beef broth .
  • 2-3 tbsps minced fresh garlic .
  • 1 (398 ml) can tomato sauce .
  • 2-3 tsps seasoning salt (use lots of seasoned salt!) .
  • 1 tsp dried oregano

Directions
  • Step #1 Butter a 13 x 9-inch baking dish.
  • Step #2 To make the sauce; heat butter in a saucepan over medium-low heat; add in garlic, 2 tsps seasoned salt & cayenne pepper & flour, chili powder, orgeano, cumin, cook stirring for 2 mins.
  • Step #3 Add in canned beef broth & bring to a boil; whisking/stirring until bubbly & thickened.
  • Step #4 Add in tomato sauce; simmer for about 4-5 mins over low heat/flame.
  • Step #5 Adjust all seasonings to taste; remove this from heat.
  • Step #6 Spread about 1-1/2 c of the sauce into the buttered baking dish; set the remaining sauce aside.
  • Step #7 For the filling; in a skillet cook the ground beef with onions, garlic & jalapeno pepper until no longer brown; drain all fat.
  • Step #8 Add in flour, beef bouillon powder, chili powder, Worcestershire sauce, cumin, oregano, seasoned salt & black pepper; cook for 2 mins.
  • Step #9 Add in stewed tomatoes then break up the tomatoes with a fork; bring to a simmer; cook uncovered for about 25 mins (adjusting seasoning to taste).
  • Step #10 After the 25 mins cooking time add in 1 c shredded cheddar cheese; stir until melted then remove this from heat.
  • Step #11 To assemble the enchiladas; spread about 1/4-c pf the beef mixture down the center of each flour tortilla, then sprinkle with 2-3 tbsps shredded cheddar cheese (or to taste).
  • Step #12 Roll up tightly & place seam-side down over the sauce in the baking dish.
  • Step #13 Drizzle the remaining sauce over the enchiladas.
  • Step #14 Cover up & bake in a 350 degree oven for about 12-15 mins or until heated through (do not overcook or the tortillas will become soggy).
  • Step #15 Remove from oven & sprinkle with about 1 c grated cheddar cheese & return to bake uncovered for another 8 mins or until the cheese has melted.
  • Step #16 Let stand for about 20 mins or more before serving.
