Ingredients
2 tbsps honey dijon mustard .
1/4 tsp salt .
2 tsps orange zest, finely grated .
1 (2-2 1/2 lb) lean pork loin roast, trimmed of excess fat .
2 tbsps honey .
1/4 tsp pepper, fresh ground if possible .
1/4 tsp allspice .
1 c dried cranberries .
2 tbsps dried onion flakes
Directions
Step #1 Combine the allspice, salt & pepper.
Step #2 Rub over the surfaceof the roast.
Step #3 Place roast in slow cooker (aka crockpot).
Step #4 Blend mustard, orange zest, honey, & onion flakes.
Step #5 Pour over the roast.
Step #6 Sprinke cranberries on top.
Step #7 Cook for 4 to 6 hrs on low or 2 to 3 hrs on high.
Step #8 Pork should be fork tender but not falling apart.
Step #9 Remove pork & allow to rest for 5 to 7 mins.
Step #10 Skim fat from the top of the sauce.
Step #11 Slice meat & serve this with sauce on top or allow diners to ladle on themselves.
