Chicken And Raisin Balti Recipe

Ingredients
  • 8 garlic cloves, minced .
  • 6 green cardamom pods .
  • 3 tbsps gingerroot, peeled & grated (about 1 1/2 inches long) .
  • 6 tbsps ground almonds .
  • 1/2 c raisins (California of course) .
  • sliced almonds, toasted, for garnish .
  • 2 serrano peppers or jalapeno chiles, sliced .
  • 3 1/2 lbs chicken meat, cut into 1 1/2-inch cubes .
  • 3/4 c butter (clarified or ghee) .
  • 2 c heavy cream .
  • 2 cinnamon sticks .
  • 1 tsp ground turmeric .
  • 2 onions, grated .
  • 4 eggs, lightly beaten .
  • 2 tsps salt .
  • 2 tbsps sugar

Directions
  • Step #1 Heat butter in a deep frypan over med-heat/flame & fry onions until lightly browned.
  • Step #2 Add gingerroot, cardamom, garlic, turmeric, chiles & cinnamon sticks.
  • Step #3 Stir-fry until onions are a deep golden brown.
  • Step #4 Add chicken & cook, stirring every once in awhile, for about 15 mins.
  • Step #5 In a small bowl, mix cream, raisins, sugar, ground almonds & salt together.
  • Step #6 Reduce heat to lowest setting & add cream mixture to pan; temper & add egg.
  • Step #7 Heat carefully for 5 to 7 mins being careful not to let mixture boil.
  • Step #8 Ladle into warmed serving bowl & serve this with naan bread.
