Turkey Roulades Recipe

Ingredients
  • 1 egg, beaten .
  • 3/4 tsp salt, divided .
  • 2 tsps lemon peel, grated .
  • 1/2 c onions, finely sliced .
  • 2 tbsps lemon juice .
  • 5 oz frozen sliced spinach, thawed & squeezed dry .
  • 1/4 tsp pepper .
  • 1 c tart apples, peeled & sliced .
  • 1 pinch ground nutmeg .
  • 1 c fresh mushrooms .
  • 2 tsps olive oil .
  • 4 (8 oz) turkey breast tenderloins .
  • 1/2 c seasoned bread crumbs

Directions
  • Step #1 In a large nonstick skillet coated with nonstick cooking spray, saute the apple, mushrooms & onion in oil until tender.
  • Step #2 Remove from the heat; stir in the the spinach, lemon peel, lemon juice, 1/4 tsp salt & nutmeg.
  • Step #3 Make a lengthwise slit down the center of each tenderloin to within 1/2 inch of botton.
  • Step #4 Open tenderloins so they lie flat; cover with plastic wrap.
  • Step #5 Flatten to 1/4 inch thickness.
  • Step #6 Remove plastic; sprinkle turkey with pepper & remaining salt.
  • Step #7 Spread spinach mixture over tenderloins to within 1 inch of edges.
  • Step #8 Roll up jelly-roll style, starting with a short side; tie with kitchen string.
  • Step #9 Place egg & bread crumbs in separate bowls.
  • Step #10 Dip roulades in egg, then roll in crumbs.
  • Step #11 Place in an 11 x 7 x 2 inch bakin pan coated wiht nonstick cooking spray.
  • Step #12 Bake, uncovered, at 375 degrees for 40-45 mins or until a meat thermometer reads 170 degrees.
  • Step #13 Let roulades stand for 5 mins before slicing.
