Weight Watcher Friendly Chicken Thyme Curry Recipe

Ingredients
  • 1 1/2 tsps grapeseed oil .
  • 600 g boneless skinless chicken breasts .
  • 3 tbsps fresh cilantro, finely sliced .
  • 2 medium onions, sliced .
  • 1 1/2 tsps fresh thyme .
  • 1 1/2 c fat-free chicken broth .
  • 2 tsps gingerroot, finely grated .
  • 4 garlic cloves, crushed .
  • 550 g tomatoes, peeled & sliced .
  • 1 tbsp curry powder (med to hot)

Directions
  • Step #1 Cut chicken into large bite sized pieces.
  • Step #2 heat oil & cook onion, thyme, curry powder, garlic & ginger til onion is soft.
  • Step #3 add tomato & coriander; cook stiring for 5 mins or til tomato soft.
  • Step #4 add chicken into pan & cook, stirring for 10 mins or until browned lightly.
  • Step #5 stir in the stock, simmer uncovered for 15 mins or til chicken is cooked through & the sauce has thickened to your taste.
