Ingredients
2 tbsps olive oil .
3 tbsps white wine .
olive oil (for frying) .
2 tbsps flour .
1 tbsp water .
1/2 c fish stock .
4 tbsps fine dry breadcrumbs .
1 tbsp minced onions .
3 tbsps water .
1 egg, beaten .
1 1/2 dozen mussels, scrubbed & beards removed
Directions
Step #1 Steam open the mussels.
Step #2 Put them in a deep pan with the water.
Step #3 Cover up the pan & put over a high heat, shaking the pan, until the shells open.
Step #4 Remove from heat & discard any mussels that do not open.
Step #5 Mussels can also be opened in a microwave.
Step #6 Place them in a microwave-safe bowl, partially covered, & microwave at full power for one min.
Step #7 Stir & microwave one min more.
Step #8 Remove any mussels that have opened & microwave one min more.
Step #9 Again remove open ones.
Step #10 Repeat twice more.
Step #11 Discard any mussels that have not opened.
Step #12 When mussels are cool enough to handle, remove & discard the empty half shells.
Step #13 Loosen the mussel meat from the bottom shell & arrange the mussels in their shells on a tray in a single layer.
Step #14 Strain the mussel liquid & reserve it.
Step #15 Heat the two tbsps of oil in a saucepan & sauté the minced onion until it is softened, without letting it brown.
Step #16 Stir in the flour, cook for a min, stirring, then whisk in the wine & the mussel liquid.
Step #17 Cook, stirring, until the mixture is thickened & smooth.
Step #18 Put a spoonful of this white sauce onto each mussel & smooth it level with the top of the shell.
Step #19 Refrigerate until the sauce is firmly set, at least one hr.
Step #20 Place the beaten egg in one dish & the bread crumbs in another.
Step #21 Dip the mussels, open face down, first into egg, then bread crumbs.
Step #22 Arrange them on the tray in a single layer.
Step #23 (The mussels can be prepared up to this point, then frozen.
Step #24 Freeze them in one layer, then pack them carefully in a freezer bag or plastic container.
Step #25 Let them thaw at least one hr before continuing with the preparation.
Step #26 ) To fry the mussels, heat enough oil to cover the bottom of a frying pan.
Step #27 Fry them in two or three batches, breaded side down, until golden brown.
Step #28 Drain briefly on paper towels & serve hot.
