Gingered Key Lime-white Chip Cookie Tart Recipe

Ingredients
  • 1 (8 oz) package cream cheese, softened .
  • 1 tsp unflavored gelatin .
  • 2 c white chocolate chips, divided .
  • CRUST .
  • 2/3 c powdered sugar .
  • 1 tsp baking soda .
  • 1 drop green liquid food coloring .
  • LIME CREAM .
  • 1/2 c granulated sugar .
  • lime slices or fresh lime zest .
  • 2 1/4 c all-purpose flour .
  • 1/2 tsp salt .
  • 1/4 c finely sliced crystallized ginger .
  • 1 c unsalted butter, softened .
  • 1 c granulated sugar .
  • 1 large egg .
  • 1 1/4 c sliced almonds, toasted, divided .
  • 1/3 c key lime juice .
  • 1 tsp almond extract

Directions
  • Step #1 FOR CRUST:.
  • Step #2 PREHEAT oven to 375°F Grease 14-inch pizza pan.
  • Step #3 Combine flour, baking soda & salt in small bowl.
  • Step #4 Beat butter, granulated sugar & powdered sugar in large mixer bowl.
  • Step #5 Beat in egg & almond extract.
  • Step #6 Gradually bet in flour mixture until well mixed.
  • Step #7 With clean hands, mix in 1 1/2 c chips, 1 c almonds & ginger.
  • Step #8 Spread dough evenly on bottom of prepared pan; build up sides of dough at edge of pan.
  • Step #9 Place piece of foil wrap on rack below pan to catch drippings.
  • Step #10 Bake for 22 to 25 mins or golden brown.
  • Step #11 Cool completely in pan on wire rack.
  • Step #12 FOR LIME FILLING:.
  • Step #13 Combine lime juice & food coloring.
  • Step #14 Sprinkle top gelatin over juice mixture.
  • Step #15 Let stand at least 10 mins.
  • Step #16 Beat cream cheese & sugar in small mixer bowl until smooth.
  • Step #17 Gradually beat in juice mixture on lowish speed.
  • Step #18 Spoon filling over tart, leaving edges uncovered (filling will be thin).
  • Step #19 Refrigerate for 2 hrs or until filling is set.
  • Step #20 Place remaining chips in small, heavy-duty plastic bag.
  • Step #21 Microwave on MEDIUM-HIGH (70%) power for 1 min; knead.
  • Step #22 Microwave at extra 10- to 20-second intervals, kneading until smooth.
  • Step #23 Cut small hole in corner & bag & squeeze to drizzle over filling.
  • Step #24 Sprinkle top with remaining almonds.
  • Step #25 Garnish with lime slices.
