Julia's Raspberry Cream Muffins Recipe

Ingredients
  • 1 tsp baking powder .
  • 1/2 c light vanilla soy milk .
  • 2 egg whites .
  • 1 egg .
  • 1 1/2 c Splenda sugar substitute, for baking .
  • 1 c all-purpose flour .
  • 1 c whole wheat flour .
  • 1 1/2 tsps vanilla .
  • 1/4 tsp baking soda .
  • 1/2 tsp salt .
  • 1/3 c light butter .
  • 2/3 c fat free cream cheese .
  • 2 c fresh raspberries

Directions
  • Step #1 mix cream cheese, & butter in large bowl.
  • Step #2 Beat with a mixer on high speed until mixed.
  • Step #3 Add sugar.
  • Step #4 Beat until fluffy.
  • Step #5 Add vanilla, egg whites, & egg.
  • Step #6 Beat well.
  • Step #7 In a separate bowl, baking soda, baking powder, Combine flours, & salt.
  • Step #8 With mixer on lowish speed, add flour mixture & soy milk to cream cheese mixture.
  • Step #9 Gently fold in raspberries.
  • Step #10 Spoon batter into muffin liners.
  • Step #11 Bake at 350 degrees.
