Creamy Leek Soup Recipe

Ingredients
  • 1 quart vegetable broth, I used Kitchen Essentials .
  • salt & freshly ground black pepper .
  • 1 c heavy cream .
  • 2 c leeks, white & light green parts only, cleaned & sliced .
  • 2 garlic cloves, minced .
  • 1/4 c butter

Directions
  • Step #1 Saute leeks & garlic in melted butter over med-heat/flame until tender but not colored.
  • Step #2 Reduce heat, add broth, cover & let simmer for 20 mins.
  • Step #3 Puree using mixer, food processor/blender, or immersion mixer.
  • Step #4 Add cream & season to taste with salt & pepper.
  • Step #5 Serve hot.
