Chicken-ramen Soup Recipe

Ingredients
  • 1 medium onion, sliced .
  • 1/4 tsp pepper .
  • 1/4 tsp salt .
  • 1 c baby carrots, sliced into 1/4-inch slices .
  • 1 tbsp olive oil .
  • 2 c cut-up deli rotisserie-cooked chicken .
  • 2 garlic cloves, minced .
  • 1 c sliced celery .
  • 1 (3 oz) package chicken-flavored ramen noodles .
  • 6 c water

Directions
  • Step #1 In a 5-quart Dutch oven, heat oil over med-heat/flame.
  • Step #2 Add carrots, & garlic; cook 3-4 mins, celery, stirring frequently,, onion, until tender.
  • Step #3 Stir in chicken, water, contents of seasoning packet from soup mix, salt, & pepper.
  • Step #4 Heat to boiling over high heat.
  • Step #5 Reduce heat to medium; simmer uncovered 10-15 mins.
  • Step #6 Stir in noodles from soup mix; simmer uncovered 4 mins longer or until noodles are tender.
