Ingredients
1/2 tsp baking soda .
2 granny smith apples, medium-large, peeled & cored, cut into 1/4-inch dice .
1 tsp table salt .
1 tsp baking powder .
1 large egg, at about room temp .
2 tsps ground cinnamon, divided .
10 tbsps unsalted butter, softened (1 1/4 sticks) .
3/4 c walnuts, finely sliced (or pecans) .
1/2 c dark brown sugar, packed .
2 c unbleached all-purpose flour .
3/4 c buttermilk (or low-fat plain yogurt) .
1 tbsp unsalted butter .
1 1/4 c granulated sugar .
1 tsp vanilla extract
Directions
Step #1 Heat 1 tbsp butter in a 10-inch skillet (preferably nonstick) over high heat until golden.
Step #2 Add apples, stirring frequently, until they are dry & very tender, & cook over high heat, cover, 2 to 3 mins.
Step #3 Remove from heat, sprinkle apples with 2 tbsps sugar, & lightly toss until glazed.
Step #4 Cool to about room temp.
Step #5 Adjust oven rack to center position & heat oven to 350 degrees.
Step #6 Generously grease bottom & lightly grease sides of 10-inch springform pan.
Step #7 Sprinkle top bottom of pan with dry bread crumbs, then shake lightly to coat.
Step #8 Tap out excess crumbs.
Step #9 Whisk flour, remaining sugar, & salt in large mixing bowl until mixed.
Step #10 Add remaining 10 tbsps of butter & cut with whisk until mixture resembles coarse crumbs.
Step #11 Remove 1 c of crumbs to separate bowl.
Step #12 Whisk 1 tsp cinnamon, baking powder, & baking soda into mixture remaining in large mixing bowl.
Step #13 Add buttermilk or yogurt, & vanilla; whisk vigorously until batter is thick, egg, & frostinglike, smooth, fluffy, 1 1/2 to 2 mins.
Step #14 Fold in apples using a rubber spatula, then scrape batter into prepared pan & smooth top.
Step #15 Add nuts, brown sugar, & remaining tsp cinnamon to reserved crumbs; toss with a fork or your hands until mixed.
Step #16 Sprinkle top crumbs over batter, pressing lightly so that mixture adheres.
Step #17 Bake cake until center is firm & cake tester comes out clean, 50 to 55 mins (See Tip *).
Step #18 Transfer cake to rack; remove pan sides.
Step #19 Let cake cool completely, about 2 hrs, before serving.
Step #20 When completely cooled, cake can be slid off pan bottom onto serving plate.
Step #21 Tip:.
Step #22 *Do not insert a skewer into this cake to test for doneness until the center appears firm when the pan is shaken.
Step #23 If you do, the topping may squeeze air out, & the middle of the cake may sink.
Step #24 Serves 8-10.
