Tom Colby's Leg Of Lamb Martini Recipe

Ingredients
  • 1 c dry vermouth .
  • 2 onions, quartered .
  • 1 tbsp cognac (optional) .
  • 1 pinch dried tarragon .
  • 1 pinch dried marjoram .
  • 1 pinch dried rosemary .
  • 1 bell pepper, cut in strips .
  • 1 slice lemons .
  • 3 bay leaves .
  • 1 pinch dried thyme .
  • 1 (2 lb) leg of lamb, see description .
  • 1/2 c consomme .
  • coriander seeds, few grains (optional) .
  • 2 c water .
  • 1 c gin

Directions
  • Step #1 Combine all ingredients except cognac & pour over lamb In a large-ish open pan.
  • Step #2 Bake at 450 degrees F.
  • Step #3 until brown & then lower heat to 325F degrees F.
  • Step #4 & continue baking until meat is tender.
  • Step #5 BE SURE TO BASTE FREQUENTLY.
  • Step #6 Allow 20 mins per lb.
  • Step #7 Meat will be pink inside.
  • Step #8 Strain juice (to which 1 tbsps cognac may be added for extra flavor).
  • Step #9 Serve piping hot with spiced lamb.
  • Step #10 This is equally good served cold.
  • Step #11 The meat is quite tantalizingly flavored & fragrant.
  • Step #12 Sauce jells in refrigerator.
