Mixed Vegetable Manchurian Recipe

Ingredients
  • 4-6 garlic cloves (finely sliced) .
  • 3 green chilies (finely sliced) .
  • 3 tbsps cornflour .
  • 1 tsp sugar .
  • oil, to deep fry .
  • 2 tbsps soy sauce .
  • salt .
  • 2 1/2 c vegetable stock .
  • 1 medium green capsicum (seeded & finely chopepd) .
  • 2 tbsps oil .
  • 1/4 c cornflour .
  • 3 spring onions, with greens (finely sliced) .
  • 1/2 tsp msg .
  • 1 inch piece gingerroot (finely sliced) .
  • 8-10 French beans (finely sliced) .
  • salt .
  • 1 tbsp vinegar .
  • 1 medium carrot (grated) .
  • 1 medium head of cabbage (grated) .
  • 1/4 c refined flour (maida)

Directions
  • Step #1 Reserve the sliced greens of the spring onions for garnishing.
  • Step #2 Mix cabbage, carrot & French beans in a bowl & thoroughly rub in one tsp of salt.
  • Step #3 Add spring onion, green capsicum, refined flour & one-fourth c of cornflour.
  • Step #4 Mix thoroughly.
  • Step #5 Shape into lemon sized balls.
  • Step #6 Heat sufficient oil in a wok & deep-fry vegetable balls in small batches for three to four mins on medium heat or until golden brown.
  • Step #7 Drain & place on an absorbent paper.
  • Step #8 Heat two tbsps of oil in a wok or a pan & stir-fry ginger & garlic briefly.
  • Step #9 Add green chillies.
  • Step #10 Stir-fry briefly.
  • Step #11 Add soy sauce, sugar, MSG & salt to taste.
  • Step #12 Stir in vegetable stock & bring to a boil.
  • Step #13 Stir in cornflour mixed in a c of water & cook for a couple of mins or till the sauce starts to thicken, stirring continuously.
  • Step #14 Add fried vegetable balls, vinegar & mix well.
  • Step #15 Serve hot, garnished with spring onion greens.
