Bacon And Potato Soup Recipe

Ingredients
  • 4 c cubed potatoes .
  • 1/2 c shredded cheddar cheese .
  • 1 stalk celery, sliced .
  • 1/2 c sliced onions .
  • 6 slices thick bacon .
  • 1/2 c sliced carrots .
  • 1/8 tsp cayenne pepper .
  • 4 c low-sodium low-fat chicken broth .
  • 1 1/2 tsps olive oil .
  • 1/2 tsp kosher salt

Directions
  • Step #1 Cook bacon until crisp in 3-quart saucepan, remove & drain well on paper towels.
  • Step #2 Discard bacon grease & wipe pan thoroughly with paper towel.
  • Step #3 Meanwhile, prepare vegetables.
  • Step #4 Add olive oil to saucepan & add onion, carrot, & celery as they are cut up.
  • Step #5 Saute until onion is soft but not brown, about 3-4 mins.
  • Step #6 Stir in chicken broth, potatoes, reduce heat, until potatoes are tender, & pepper; bring to a boil, covered, & let simmer, about 10-15 mins.
  • Step #7 Stir in cheese, heating just until melted--do not boil.
  • Step #8 Chop bacon & add to soup.
  • Step #9 Adjust seasoning to taste by adding salt, if desired.
  • Step #10 Serve at once.
