Roast New York Strip Loin With Garlic-herb Crust Recipe

Ingredients
  • 4 tsps fresh thyme leaves .
  • 4 garlic cloves .
  • 4 tsps olive oil .
  • 8 fresh sage leaves .
  • 1 1/2 tsps ground black pepper .
  • 2-4 tsps salt (depending on how salty you like your food) .
  • 1 (4-5 lb) boneless beef roast, loin new york strip, fat trimmed to 1/4 inch

Directions
  • Step #1 With machine running, drop garlic into processor; mix until finely sliced.
  • Step #2 Add sage, oil, thyme, salt & pepper; process until paste forms.
  • Step #3 Pat meat dry with paper towels.
  • Step #4 Rub meat all over with herb paste.
  • Step #5 Cover up; chill at least 3 hrs.
  • Step #6 (Can be made 1 day ahead.
  • Step #7 Keep put in the fridged.

  • Step #9 Preheat oven to 450°F Place meat, fat side up, on rack in roasting pan.
  • Step #10 Roast meat 15 mins.
  • Step #11 Reduce oven temperature to 350°F Roast meat until instant-read thermometer inserted into thickest part of meat registers 130°F for medium-rare, about 35 mins (or 140°F for medium, about 40 mins).
  • Step #12 Remove from oven; let this stand 20 mins.
  • Step #13 Cut crosswise into 1/3-inch-thick slices.
  • Step #14 Arrange slices on platter.
