Baked Potatoes And Capsicum Recipe

Ingredients
  • 3 garlic cloves .
  • 6 medium capsicums .
  • 1/2 c olive oil .
  • oregano .
  • 1500 g gourmet potatoes .
  • 3 firm tomatoes (optional)

Directions
  • Step #1 Place clean potatoes & capsicums on an oven tray.
  • Step #2 Roast for 45 mins or until soft.
  • Step #3 Potato skins should be crisp & crackling.
  • Step #4 Allow capsicums to cool & peel skin.
  • Step #5 Tear capsicums into strips.
  • Step #6 Place potatoes in a bowl.
  • Step #7 Add capsicums.
  • Step #8 Dress with a good dressing of oilve oil, finely cut garlic & crushed oregano.
  • Step #9 Add firm tomatoes wedges if desired.
  • Step #10 Toss & serve this with fresh crusty bread.
  • Step #11 Tip.
  • Step #12 Red capsicum is best, however combination of red, green & yellow is a colourful presentation.
