Salmon Fillets With Pesto And Pistachios Recipe

Ingredients
  • 1/2 c sliced pistachios .
  • 1/4 c buitoni put in the fridged pesto sauce .
  • 1 1/2-2 lbs salmon fillets

Directions
  • Step #1 Preheat the oven to 350°F Take four salmon fillets (do NOT use salmon steaks!) of about 6-7 oz.
  • Step #2 each & put them on a cookie sheet that has been sprayed with Pam or brushed with olive oil to prevent sticking.
  • Step #3 Spoon about 1 tbsp of Butoni pesto (in the grocery store put in the fridged section) onto the top of each filet & spread evenly.
  • Step #4 Take the pistachios (shell the nuts, put in a baggie & whack with the side of a meat tenderizer/lber) & cover the pesto with them.
  • Step #5 The amounts of pesto & pistachios depend on the size of the fillets, so use your judgment here.
  • Step #6 Bake for about 20-22 mins until done.
  • Step #7 Serve as soon as possible.
  • Step #8 (I serve it with roasted baby red potatoes & asparagus.
  • Step #9 ).
